Native Plants:  That is our topic on this episode of the Tennessee Farm Table.  With the change in the seasons, lots of us are thinking about fall planting, and landscaping.  I visit with Meredith Clebsch of Greenback, Tennessee and hear why it makes good sense to invest in native plants financially, environmentally, and aesthetically.   Meredith is the Land Directorr at Foothills Land Conservancy and she also co-owned and operated a native plant nursery in Greenback, Tennessee for over 30 years. Foothills Land Conservancy

Foothills Land Conservancy, 33 years of preserving mountains, working farms & rural landscapes

A visit with Foothills Land Conservancy. This Blount County, Tennessee based non profit organization in it’s 33 years has  assisted in the preservation of over 100,000 acres of cherished mountains, working farms, and rural landscapes in 38 Tennessee counties and across 6 additional states!  2017 was another banner year for the Conservancy! In addition to relocating their organization out to the 300 acre Harris Farm and adding two staff biologists to the team, FLC preserved close to 15,700 acres! Foothills is a 501(c)(3) non-profit and does not receive any financial assistance from local, state or federal governments. They rely on individual and corporate contributions solely to sustain the organization, land acquisition and stewardship funds.

Recipe for Overnight Pickles:
Shared by Fred Sauceman by way of Lynn Tolley of Miss Mary Bobo’s Boarding House, Lynchburg, TN and great grand niece of Jack Daniels, his closest surviving relative.

Ingredients:
6 medium Cucumbers, peeled and sliced
2 small onions, peeled and sliced.
In a sauce pan, combine the following ingredients:
1/4 c. Sugar
1c. of Apple Cider Vinegar (or white vinegar)
1 tsp. of dill seed
1 tsp. of mustard seed
1 tsp. of celery seed
1 TB. Salt
1/2 tsp. of cream of tarter
Directions:
Bring this mixture to a boil
Boil for 1 minute

Poor hot mixture over cucumbers and onions
Pour everything into a non reactive bowl or jar, cover and and marinate overnight in the refrigerator

These pickles will be ready to eat the next day.

Bill is the owner, operator of Houston’s Mineral Well, in New Market, TN. http://www.houstonsmineralwater.com/ Bill’s Grand Father dug this well in 1931 after an epiphany dream and was miraculously healed from a severe kidney ailment by the water from this well which he established and opened to the public. It is still open and run today (and on the honor system) by Bull Houston.
